Firewalling between MS Clients and MS Server

Looking to segment the network for one of the firms my employer owns and I want to use the Zero Trust approach. Want to start with segmenting the network by placing Windows clients and Windows Servers on two separate segments with a firewall between them. Currently the network is flat [ not my doing, lol]. Besides LDAP [TCP 389], SMB [TCP 445], and DNS - what other traffic should I allow between the two segments?
